Retail on The Rocks? Try Coffee Plus Cocktails

National  + Weekender  |

If you’ve been to a Connect Conference event, you know that we believe cocktails are cooler than coffee. In fact, many coffee shop operators are now adding cocktail service to their list of offerings to diversify and protect their retail investment.

By using different day parts and tapping (no pun intended) into different customer segments, various coffee-cocktail hybrids are popping up all around the nation in various formats. While some, like Patent Coffee and Patent Pending in New York, split their 1,200-square-foot space with coffee in front and cocktails in back, others like Nomad’s in Kansas City serve the two drinks side-by-side. Kobrick Coffee Co. in New York takes it to the next level, and offers coffee-infused cocktails made using coffee equipment.

In St. Louis, the coffee-cocktail movement is expanding even further into co-working space at Daniel Brian’s Trust, through its partnership with co-working space Covo. Brian says, “We make a more intensive use of the space than if we were only a coffee shop or only a bar, which means a quicker ROI for the capital we put into building out Trust.”

Given the fact that barista literally means bartender in Italian, and both cocktails and coffee-making is an art, it’s no wonder why this concept is taking off.
