Hotel, Apartments Taking Place of Iconic San Antonio Diner

A major mixed-use project may soon replace the building where the historic Pig Stand diner once thrived in San Antonio.

GrayStreet Partners wants to build 100 multifamily units per acre, a hotel taller than 35 feet and food and beverage operations. At 0.372 acres, that would allow for up to 37 apartments.

After the Pig Stand is demolished, GrayStreet has plans for a 211-key hotel under Marriott International’s midscale AC Hotel flag. The hotel would rise to seven stories and feature 156 parking spaces.

Merritt Development Group and DLR Group are mentioned in past plans as the developer/operator of the hotel.

After 101 years of operation, the Pig Stand closed its doors in 2023. The location was initially one of more than 130 Pig Stand locations across the United States, and the San Antonio location was the last remaining operating restaurant in the Dallas-based franchise.
