Gibsons Restaurant Group is in discussions for a location in the Fulton Market, a neighborhood it has long had its eye on

Gibsons Restaurant Group Nears Deal for Fulton Market Location 

Gibsons Restaurant Group is nearing a deal to open a location in the Fulton Market District, a neighborhood where the Chicago restaurant operator has long sought a presence. The company aims to lease about 15,000 square feet in a yet-to-be-constructed building at 917 W. Fulton Market, Alex Najem, co-founder of developer Fulton Street Cos., told Crain’s Chicago Business

The building will likely be completed in 2024, with the restaurant opening that spring, Najem said. Gibsons is a Chicago staple, and Najem said he’s always wanted to bring it to Fulton Market. Similarly, Gibsons chairman Steve Lombardo III said the group has been eyeing properties in Fulton Market for years.  

“Fulton Market’s been an up-and-coming area, and now it has … up and come,” he said. “We’ve had bids out on properties, we’ve tried to buy real estate, we’ve tried to lease real estate, we’ve just never been able to.”
