“True one-to-one marketing is still difficult and expensive for most brands today, but it’s becoming more accessible every day,” Ciancio said in an interview with FastCasual. “In the meantime, there is a huge opportunity for restaurants to get much smarter about segmentation.”

Rather than focusing solely on acquiring one-off visitors—where roughly 70% to 80% of restaurant guests only visit a location once—top-performing brands focus on converting repeat guests into high-frequency core customers.

“Instead of guessing what marketing campaign to run next, you can identify the behaviors that correlate with your best customers,” Ciancio said.

When operators connect purchase behavior with guest sentiment, they gain a clearer picture of store-level performance. For CRE stakeholders, this operational clarity translates into predictable revenue, stronger store-level EBITDA, and confident footprint expansion into new shopping centers and developments.
