More Steak Coming to Edinburg

Construction has launched on Bob’s Steak and Chop House, which is going north at the Shoppes at Rio Grande Valley in Edinburg. The restaurant at 103 E. Trenton Rd. is scheduled to open in spring 2017, creating 50 jobs. The restaurant will be owned and operated by the Robert Co., a licensee of the concept.

The Shoppes at Rio Grande Valley is a 120-acre retail property at Interstate 69 Central and Trenton Road, which is being developed by Hartford Realty Corp. So far, 450,000 square feet of space has been developed, and First Hartford is expanding the center to more than 1 million square feet.
