Brewery Taking Space in Former Fallout Shelter

Grain Theory Brewing Co. is targeting a former fallout shelter in downtown Abilene, TX for a brewery and customer gathering spot. The destination building, located at 202 Pine St., is currently shuttered, with owners Tiffany and Daniel Gutierrez rehabbing it into an entertainment hub, along with other uses.

The three-partner brewery is planning to operate on the second floor of the 30,150-square-foot, three-story building. The property delivered in the 1950s, and was once used as a fallout shelter, meaning that the second floor is strong enough to support large brewing tanks. Furthermore, the roof is rated for occupancy as well. Over the years, the building has housed a five-and-dime store, a department store, the Stenograph Institute of Texas, and Young Life of Abilene.

Grain Theory Brewing Co. partners Jeramie Sivley, Matthew Cogburn and David Kasselman envision the location as one where people can spend time with friends, sampling beer flights.
